- 4 Tbsp cornstarch
- 2/3 c. sugar or honey
- 1/4 tsp.
- 4 c. milk
- 4 egg yolks, beaten
- 2 Tbsp butter
- 4 tsp vanilla
Mix cornstarch, salt and sugar in a saucepan (if using honey, add with milk and eggs.) Whisk together milk and eggs thoroughly, and gradually stir in. Cook over medium heat, stirring constantly, till mixture comes to a boil.
(Don't be tempted to turn up the heat; if it gets hot to fast, the eggs will cook. And scrambled eggs in vanilla pudding would be bad. Really, really bad!)
Boil for at least 1 minute, still stirring constantly. Remove from heat and stir in butter and vanilla. Serve warm or chilled.
Notes: For chocolate pudding: increase sugar and add cocoa with cornstarch. For banana pudding add one blended banana with butter and vanilla.
